- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, thoroughly mash the ripe bananas with a fork until smooth.
- Add the rolled oats to the mashed bananas and stir until well combined.
- Drop spoonfuls of the mixture onto the prepared baking sheet, forming 12 cookies. Bake for 12-15 minutes until edges are golden.
- Cool cookies on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
Notes
For extra flavor, consider adding a pinch of cinnamon, a splash of vanilla extract, or 1/2 cup of chocolate chips. These cookies are best stored in an airtight container at room temperature for up to 3 days.
