Ingredients
  

Main Ingredients
  • 4 medium russet potatoes Best texture for potato skins
  • 1 tablespoon olive oil For rubbing on potatoes
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup shredded cheddar cheese Can substitute with other cheeses
  • 1/2 cup cooked bacon, crumbled Can be substituted with turkey bacon or omitted
  • 1/4 cup green onions, chopped For garnish
  • to taste Sour cream For serving

Method
 

Preparation
  1. Preheat the air fryer to 400°F (200°C).
  2. Wash and dry the potatoes. Poke holes in each potato with a fork, then rub with olive oil, salt, and pepper.
Cooking
  1. Air fry the potatoes for 25 minutes or until tender.
  2. Let cool slightly, then cut each potato in half and scoop out some of the flesh.
  3. Place the potato halves back in the air fryer, skin side down. Fill each half with cheese and bacon.
  4. Air fry for an additional 5 minutes until the cheese is melted and bubbly.
Serving
  1. Top with green onions and serve with sour cream.

Notes

For extra crispy skin, make sure to dry the potatoes well before adding oil. You can customize your toppings! Try adding jalapeños, sour cream, or different types of cheese. Don't skip the step of poking holes in the potatoes; this helps steam escape while cooking. If you have any leftovers, store them in an airtight container in the refrigerator for 2-3 days and reheat in the air fryer.
