Dry Ingredients
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
Wet Ingredients
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
Optional Ingredients
  • 1/2 cup chopped nuts optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, mix together flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together buttermilk, vegetable oil, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. If using, fold in the chopped nuts.
  5. Pour the batter into the prepared loaf pan.
Baking
  1. Bake for 50-60 minutes or until a toothpick inserted into the centre comes out clean.
  2. Let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Serve with butter or cream cheese. It can be stored at room temperature for up to three days, or frozen for up to three months.
