Preparation
- Preheat oven to 375°F (190°C). Prepare chicken breasts by slicing a pocket into the thickest part of each, being careful not to cut all the way through.
- In a small bowl, combine diced apple and Brie cheese. Season chicken breasts inside and out with salt, pepper, and garlic powder.
Stuffing and Cooking
- Divide the apple and Brie mixture evenly and stuff it into the pockets of each chicken breast. Secure the openings with toothpicks if needed.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken breasts for 2-3 minutes per side until lightly browned.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until chicken is cooked through and juices run clear. Remove toothpicks before serving.
Notes
For extra flavor, consider adding a sprinkle of fresh thyme or rosemary to the apple and Brie filling.
