  • 4 oz Brie Cheese (113g), rind removed, cut into small pieces
  • 1 small Apple (e.g., Honeycrisp or Granny Smith), cored and finely diced

  • 1 tbsp Olive Oil
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 tsp Garlic Powder

Method
 

Preparation
  1. Preheat oven to 375°F (190°C). Prepare chicken breasts by slicing a pocket into the thickest part of each, being careful not to cut all the way through.
  2. In a small bowl, combine diced apple and Brie cheese. Season chicken breasts inside and out with salt, pepper, and garlic powder.
Stuffing and Cooking
  1. Divide the apple and Brie mixture evenly and stuff it into the pockets of each chicken breast. Secure the openings with toothpicks if needed.
  2. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken breasts for 2-3 minutes per side until lightly browned.
  3. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until chicken is cooked through and juices run clear. Remove toothpicks before serving.

Notes

For extra flavor, consider adding a sprinkle of fresh thyme or rosemary to the apple and Brie filling.
