Ingredients

Main
  • 1.5 lbs Boneless, skinless chicken thighs cut into 1-inch pieces
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
Sauce
  • 1 cup Apple cider
  • 0.5 cup Chicken broth
  • 1 tbsp Dijon mustard
  • 2 tbsp Maple syrup
  • 2 cloves Garlic minced
  • 1 tsp Fresh thyme chopped
  • 1 tbsp Cornstarch
  • 2 tbsp Water for slurry

Equipment

  • Large skillet
  • Tongs
  • Whisk

Method

Preparation
  1. Season chicken pieces evenly with salt and pepper.
Cooking
  1. Heat olive oil in a large skillet over medium-high heat, then brown the chicken on all sides before removing and setting aside.
  2. Deglaze the skillet with apple cider, scraping up any browned bits; then add chicken broth, Dijon mustard, maple syrup, minced garlic, and thyme, bringing the mixture to a simmer.
  3. Whisk cornstarch and water together in a small bowl to form a slurry, then stir it into the simmering sauce to begin thickening.
  4. Return the chicken to the skillet, coating it in the sauce, and cook for 5-7 minutes until the chicken is cooked through and the sauce reaches your desired thickness.
Serve
  1. Serve the apple cider chicken immediately, optionally garnished with fresh thyme.
