Ingredients
  

Dry Ingredients
  • 2 cups rolled oats
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup milk (or non-dairy milk)
  • 1/2 cup applesauce
  • 2 pieces eggs Can be replaced with flax eggs for a vegan option.
  • 1/4 cup maple syrup (optional) Adjust based on sweetness preference.
Filling
  • 2 pieces apples, diced Use a mix of sweet and tart apples for best flavor.

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a muffin tin or line it with paper liners.
  2. In a large bowl, combine the oats, cinnamon, baking powder, and salt.
  3. In another bowl, whisk together the milk, applesauce, eggs, and maple syrup (if using).
  4. Add the wet ingredients to the dry ingredients and mix until well combined.
  5. Fold in the diced apples.
Baking
  1. Divide the mixture evenly into the muffin tin, filling each cup about 3/4 full.
  2. Bake for 20-25 minutes or until the tops are golden and a toothpick comes out clean.
  3. Allow to cool for a few minutes before removing from the pan.

Notes

Serve warm with a drizzle of maple syrup or a dollop of yogurt. They store well in the refrigerator for up to 5 days and can be frozen for longer storage.
