Ingredients
  

Wet Ingredients
  • 1 cup Greek yogurt Use plain Greek yogurt for best flavor.
  • 1 cup apples, peeled and diced Use ripe apples for better sweetness.
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
Dry Ingredients
  • 1 1/2 cups all-purpose flour Can substitute some with whole wheat flour for added fiber.
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the Greek yogurt, sugar, vegetable oil, egg, and vanilla until well combined.
  3. Fold in the diced apples and cinnamon.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fill each muffin cup about 2/3 full with the batter.
Baking
  1. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  2. Allow to cool before serving.

Notes

Serve muffins warm or at room temperature. Great on their own or with butter/yogurt. Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
