Preparation
- Combine flour, granulated sugar, brown sugar, and cinnamon in a large bowl to prepare the crumb topping. Cut in cold butter until coarse crumbs form, then refrigerate.
- Toss sliced Granny Smith apples with granulated sugar, cinnamon, and lemon juice for the apple filling, then set aside.
- Preheat the oven to 350°F (175°C) and prepare a 9x13 inch baking pan by greasing and flouring it. In a medium bowl, whisk together the flour, baking powder, and salt for the cake batter.
Making the Cake
- Cream softened butter and granulated sugar in a large bowl until light and fluffy using an electric mixer. Beat in eggs one at a time, then mix in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with milk, mixing until just combined without overmixing.

- Carefully spread the remaining cake batter over the apples, and then sprinkle the chilled crumb topping evenly over the top layer of batter.
Baking and Serving
- Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean and the topping is golden brown.
