  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 2 cups apples, peeled and diced
  • 1 teaspoon ground cinnamon
Crumb Topping Ingredients
  • 1/2 cup brown sugar
  • 1/4 cup rolled oats

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, cream the butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla.
  5. Add the sour cream and mix well.
  6. Gradually add the dry ingredients to the wet ingredients until just combined.
  7. Fold in the diced apples and cinnamon.
  8. Pour the batter into the prepared cake pan.
Crumb Topping and Baking
  1. In a small bowl, combine brown sugar, oats, and a touch of butter to make the crumb topping, then sprinkle it over the batter.
  2. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  3. Let cool before serving.

Notes

Serve warm or at room temperature, with vanilla ice cream or whipped cream. Store leftovers in an airtight container for up to 2 days at room temperature or refrigerate for up to a week. Wrap tightly for freezing up to 3 months.
