Crust
- In a large bowl, whisk flour and salt, then cut in cold butter until coarse crumbs form. Gradually add ice water, mix into a dough, divide, flatten, wrap, and chill for 30 minutes.
Filling
- In a separate large bowl, combine sliced apples with sugar, cinnamon, nutmeg, lemon juice, and flour, tossing gently to coat.
Assemble & Bake
- Roll out one dough disc to 12 inches, transfer to a 9-inch pie dish, and pour in the apple filling.
- Roll out the second disc for a top crust or lattice, placing it over the filling and crimping the edges; cut slits if not using a lattice.
- Preheat oven to 400°F (200°C), bake for 15 minutes, then reduce to 375°F (190°C) and bake for 35-45 more minutes until golden and bubbly; cool completely before serving.
Notes
For best results, use a mix of tart and sweet apples like Granny Smith and Honeycrisp.
