Apple Pie

Ingredients
  

For the Crust
  • 2 ½ cups all-purpose flour
  • 1 tsp salt
  • 1 cup unsalted butter cold, cubed
  • ½ cup ice water
For the Filling
  • 6-8 medium apples peeled, cored, and sliced
  • ¾ cup granulated sugar
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tbsp lemon juice
  • 2 tbsp all-purpose flour

Method
 

Crust
  1. In a large bowl, whisk flour and salt, then cut in cold butter until coarse crumbs form. Gradually add ice water, mix into a dough, divide, flatten, wrap, and chill for 30 minutes.
Filling
  1. In a separate large bowl, combine sliced apples with sugar, cinnamon, nutmeg, lemon juice, and flour, tossing gently to coat.
Assemble & Bake
  1. Roll out one dough disc to 12 inches, transfer to a 9-inch pie dish, and pour in the apple filling.
  2. Roll out the second disc for a top crust or lattice, placing it over the filling and crimping the edges; cut slits if not using a lattice.
  3. Preheat oven to 400°F (200°C), bake for 15 minutes, then reduce to 375°F (190°C) and bake for 35-45 more minutes until golden and bubbly; cool completely before serving.

Notes

For best results, use a mix of tart and sweet apples like Granny Smith and Honeycrisp.
