  • 1 cup pomegranate seeds
  • 1 honey crisp apple (thinly sliced) Can substitute with other apple varieties.
  • 1/4 cup chopped pecans or walnuts Feel free to use different types of nuts.
  • Salad greens (kale, arugula, or mixed greens) Use a variety for more color and flavor.
  • 2 tbsp feta cheese (or gorgonzola) Omit for vegan option.
Dressing Ingredients
  • 1/3 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 tbsp honey (or equal parts maple syrup)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

Method
 

Preparation
  1. In a large salad bowl, combine the selected greens, pomegranate seeds, sliced apples, nuts, and feta cheese. Toss gently.
  2. To make the dressing, mix olive oil, balsamic vinegar, honey (or maple syrup), garlic powder, salt, and pepper in a glass jar. Shake until well combined.
  3. Drizzle dressing over the salad just before serving and toss lightly.

Notes

Store leftovers in an airtight container in the refrigerator and consume within one day. Keep dressing separate until ready to serve.
