Cake Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened Make sure butter is at room temperature.
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup unsweetened applesauce
  • 2 cups diced honey crisp apples
Icing Ingredients
  • 1/2 cup brown sugar For icing
  • 2 tablespoons milk For icing

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla and applesauce.
  5. Gradually mix in the dry ingredients and fold in the diced apples.
Baking
  1. Pour the batter into the prepared pan and bake for 40-45 minutes, or until a toothpick comes out clean.
Icing
  1. For the icing, combine brown sugar and milk in a saucepan and cook over medium heat until it begins to boil.
  2. Remove from heat and let cool slightly before drizzling over the cooled cake.

Notes

Serve warm or at room temperature. Pairs well with vanilla ice cream or whipped cream. Sprinkle with additional cinnamon for enhanced flavor.
