  • 2 cups rice Long-grain or medium-grain rice works best.
  • 4 cups chicken broth Homemade or store-bought.
  • 1 pound chicken breast, cooked and shredded For best flavor, season the chicken before cooking.
  • 1 cup peas Frozen or fresh.
  • 1 cup carrots, diced Fresh or frozen.
  • 1 medium onion, chopped For added sweetness and flavor.
  • 2 cloves garlic, minced For seasoning.
  • 1/2 cup mayonnaise For creaminess; can be substituted.
  • 1/2 cup cheese, grated Use your favorite cheese.
  • to taste Salt and pepper For seasoning.
  • as needed tablespoons Olive oil For sautéing.

Method
 

Preparation
  1. In a pot, heat olive oil over medium heat and sauté the onion and garlic until fragrant.
  2. Add the rice and stir for a couple of minutes to coat it with the oil.
Cooking Rice
  1. Pour in the chicken broth and bring to a boil.
  2. Reduce heat, cover, and simmer until the rice is cooked, about 18-20 minutes.
Mixing Ingredients
  1. In a large bowl, combine the cooked rice, shredded chicken, peas, diced carrots, and mayonnaise. Mix well.
  2. Season with salt and pepper to taste.
Baking
  1. Transfer the mixture to a baking dish, sprinkle grated cheese on top, and bake in a preheated oven at 350°F (175°C) for 20 minutes, or until the cheese is melted and bubbly.
