Ingredients
  

For the cookie dough
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup salted butter (softened at room temperature)
  • 1 cup granulated sugar
  • 2 large eggs (at room temperature)
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract or reduce to ¼ teaspoon for a milder taste
For the icing
  • 3 cups sifted powdered sugar for icing
  • 3-4 tablespoons milk for icing
  • 2 tablespoons light corn syrup for icing
  • ½ teaspoon vanilla extract for icing
  • Optional gel food coloring for icing

Method
 

Preparation
  1. Gather all your ingredients and preheat your oven to 350°F (175°C).
  2. In a bowl, mix the flour, baking powder, and salt together. Set aside.
  3. In another bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs, vanilla extract, and almond extract to the butter mixture. Mix well.
  5. Gradually add the flour mixture to the wet ingredients. Mix until smooth.
  6. Chill the dough in the refrigerator for about 30 minutes to make it easier to roll out.
Baking
  1. After chilling, roll out the dough on a floured surface to about ¼ inch thick.
  2. Use cookie cutters to cut out shapes and place them on a baking sheet lined with parchment paper.
  3. Bake for 8-10 minutes or until the edges are lightly golden. Let them cool.
Icing
  1. For icing, mix powdered sugar, milk, light corn syrup, and vanilla extract in a bowl. Add food coloring if desired.
  2. Decorate the cooled cookies with icing as you like.

Notes

To keep your cookies fresh, store them in an airtight container at room temperature. They will stay tasty for up to one week. For longer storage, freeze the baked cookies in a freezer bag or container for up to three months. Just thaw at room temperature before enjoying!
