  • 1 cup ripe bananas, mashed Use very ripe bananas for the best flavor.
  • 1 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 1/2 cups all-purpose flour Can substitute with gluten-free flour.
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips Optional.
  • 1/2 cup chopped nuts Optional.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking pan.
  2. In a large bowl, combine the mashed bananas, brown sugar, melted butter, vanilla extract, and egg. Mix well.
  3. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in chocolate chips and nuts if using.
  6. Pour the batter into the prepared pan and spread evenly.
Baking
  1. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow to cool before cutting into squares.

Notes

Serve warm or at room temperature. Can be paired with ice cream or whipped cream. Store in an airtight container for up to 3 days or in the fridge for about a week. Can freeze for up to 3 months.
