  • 1 ½ cups All-purpose flour
  • 1 teaspoon Baking soda
  • ½ teaspoon Salt
  • ½ teaspoon Cinnamon
Wet Ingredients
  • ½ cup Unsalted butter 113g, softened
  • 1 cup Granulated sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1 cup Mashed ripe bananas about 3 medium
  • ¼ cup Buttermilk

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C); then, grease and flour a 9x13 inch baking pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon until well combined.
  3. In a large bowl, cream together the softened unsalted butter and granulated sugar until the mixture is light and fluffy.
  4. Beat in the eggs one at a time; then, stir in the vanilla extract and mashed ripe bananas.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, ensuring to begin and end with dry ingredients; mix until just combined.
  6. Pour the batter evenly into the prepared baking pan.
  7. Bake for 30-35 minutes, or until a wooden skewer inserted into the center of the cake comes out clean.
  8. Allow the cake to cool completely in the pan on a wire rack before frosting or serving.

Notes

Ensure bananas are very ripe for the best flavor. Do not overmix the batter to keep the cake tender.
