- Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
- In a large bowl, mash the ripe bananas with a fork until smooth.
- Stir in the rolled oats, cinnamon, honey (or maple syrup), vanilla extract, and salt until well combined.
- If desired, fold in chocolate chips or nuts.
Baking
- Pour the mixture into the prepared baking dish and spread it evenly.
- Bake for 20-25 minutes, or until the edges are golden brown.
- Allow to cool before cutting into bars.
Notes
You can serve these bars as a quick breakfast or snack, paired with yogurt or fresh fruit. Drizzle with honey or maple syrup for extra sweetness. Store leftovers in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
