Ingredients
  

Main ingredients
  • 2 pieces ripe bananas Very ripe for sweetness and flavor
  • 1 cup rolled oats
  • 1/2 cup almond flour (or all-purpose flour) Can substitute with other flours
  • 1/4 cup honey or maple syrup Adjust based on sweetness preference
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Optional: chocolate chips or nuts For added flavor and texture

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add the rolled oats, almond flour, honey or maple syrup, vanilla extract, baking powder, and salt. Mix until well combined.
  4. If desired, fold in chocolate chips or nuts.
  5. Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
Baking
  1. Bake for 12-15 minutes or until golden brown.
  2. Allow to cool before serving.

Notes

Cookies can be served warm or at room temperature. For a special touch, sprinkle with powdered sugar before serving. Store in an airtight container for a few days at room temperature or up to a week in the fridge. Freeze in a bag for up to three months.
