Preparation
- Cook the udon noodles according to package instructions. Drain and set aside.
- In a bowl, mix together mayonnaise, sweet chili sauce, sriracha, soy sauce, and cornstarch to create the bang bang sauce.
Cooking
- Season the diced chicken with salt and pepper. In a skillet, heat sesame oil over medium-high heat.
- Cook the chicken until browned and cooked through, about 5-7 minutes.
- Once the chicken is cooked, add the bang bang sauce to the skillet and stir to coat the chicken.
Mixing
- In a large bowl, combine the cooked udon noodles with the bang bang chicken. Toss to mix well.
- Garnish with sliced green onions before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the microwave or on stovetop, adding a bit of water if needed to loosen noodles. This dish can also be made vegetarian by substituting chicken with tofu or vegetables.
