Main Ingredients
  • 8 oz udon noodles
  • 1 lb chicken breast, diced Make sure to dice into even pieces for even cooking.
Bang Bang Sauce
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tbsp sriracha Adjust for desired spice level.
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch To thicken the sauce.
Garnish and Cooking
  • 2 tbsp sesame oil For cooking the chicken.
  • 2 pieces green onions, sliced For garnish.
  • to taste Salt and pepper To season the chicken.

Method
 

Preparation
  1. Cook the udon noodles according to package instructions. Drain and set aside.
  2. In a bowl, mix together mayonnaise, sweet chili sauce, sriracha, soy sauce, and cornstarch to create the bang bang sauce.
Cooking
  1. Season the diced chicken with salt and pepper. In a skillet, heat sesame oil over medium-high heat.
  2. Cook the chicken until browned and cooked through, about 5-7 minutes.
  3. Once the chicken is cooked, add the bang bang sauce to the skillet and stir to coat the chicken.
Mixing
  1. In a large bowl, combine the cooked udon noodles with the bang bang chicken. Toss to mix well.
  2. Garnish with sliced green onions before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the microwave or on stovetop, adding a bit of water if needed to loosen noodles. This dish can also be made vegetarian by substituting chicken with tofu or vegetables.
