  • 1 cup cornmeal

  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

  • 1 cup milk sweetened almond milk can be used as a substitute
  • 2 large eggs
  • 1/4 cup melted butter

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and grease a baking dish.
  2. In a bowl, mix together the cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the milk, eggs, and melted butter.
  4. Combine the wet and dry ingredients and stir until just mixed.
  5. Pour the batter into the prepared baking dish.
Baking
  1. Bake for 20-25 minutes, or until the edges are crispy and a toothpick inserted in the center comes out clean.
  2. Let it cool slightly before serving.

Notes

Make sure your baking powder is fresh for the best rise. Don’t overmix the batter; it’s okay if there are a few lumps. For added flavor, you can mix in some grated cheese or jalapeños. Wrap cooled cornbread in plastic wrap or store it in an airtight container; lasts at room temperature for up to two days or freeze for up to three months.
