Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- In another bowl, combine the sugar, orange juice, vegetable oil, egg, and orange zest.
- Mix the wet ingredients into the dry ingredients until just combined.
- Fold in the cranberries.
- Pour the batter into the prepared loaf pan.
Baking
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Best served warm or at room temperature. Serve plain or with butter or cream cheese. Store wrapped at room temperature for up to 3 days or freeze for up to 3 months.
