- In a large skillet, brown the ground beef over medium-high heat, breaking it apart as it cooks, then drain any excess fat.
- Stir in minced garlic and grated ginger, cooking for another minute until fragrant.
- In a small bowl, whisk together soy sauce, brown sugar, gochujang (if using), rice vinegar, water, and sesame oil.
- Pour the sauce over the cooked beef and simmer for 2-3 minutes, allowing the sauce to thicken slightly and coat the beef.
- Divide cooked rice among bowls and top with the Korean ground beef. Garnish with sesame seeds, sliced green onions, shredded carrots, and cucumber slices.
Notes
For a healthier option, serve over cauliflower rice or with a side of steamed vegetables. Adjust gochujang to your preferred spice level.
