Ingredients
  

Meat and Vegetables
  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 3 medium potatoes, diced
  • 1 can diced tomatoes (14 oz)
  • 4 cups beef broth Can substitute with vegetable or chicken broth.
  • 1 tsp dried oregano
  • 1 tsp salt Adjust to taste.
  • 1/2 tsp pepper Adjust to taste.
  • 1 cup frozen peas

Method
 

Preparation
  1. In a crockpot, brown the ground beef with the chopped onion and minced garlic. Drain any excess fat.
  2. Add all remaining ingredients to the crockpot. Stir to combine.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the vegetables are tender.
Serving
  1. Serve warm with a slice of crusty bread or warm rolls on the side. A sprinkle of fresh herbs can add a nice touch.

Notes

Store any leftover soup in an airtight container in the fridge for up to three days. It can also be frozen for up to three months. For extra flavor, try adding a bay leaf while cooking, but remember to remove it before serving. To thicken the soup, mash some of the potatoes before serving or add a tablespoon of cornstarch mixed with water.
