Preparation
- In a crockpot, brown the ground beef with the chopped onion and minced garlic. Drain any excess fat.
- Add all remaining ingredients to the crockpot. Stir to combine.
Cooking
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the vegetables are tender.
Serving
- Serve warm with a slice of crusty bread or warm rolls on the side. A sprinkle of fresh herbs can add a nice touch.
Notes
Store any leftover soup in an airtight container in the fridge for up to three days. It can also be frozen for up to three months. For extra flavor, try adding a bay leaf while cooking, but remember to remove it before serving. To thicken the soup, mash some of the potatoes before serving or add a tablespoon of cornstarch mixed with water.
