  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened Make sure butter is at room temperature.
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg Can substitute with a flaxseed egg for vegan option.
  • 1 teaspoon vanilla extract
Mix-ins
  • 1 cup dark chocolate chips
  • 1 cup dried cranberries Can substitute with raisins or chopped dried cherries.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix the rolled oats, flour, baking soda, and salt.
  3. In another bowl, cream together the softened butter, brown sugar, and granulated sugar.
  4. Beat in the egg and vanilla extract until smooth.
  5. Gradually add the dry ingredients to the wet ingredients and mix until well combined.
  6. Stir in the dark chocolate chips and dried cranberries.
Baking
  1. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake for 12-15 minutes until the edges are golden.
  3. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a chewier texture, store cookies with a slice of bread to maintain moisture. Customize by adding nuts or using white chocolate chips for a different flavor.
