- Heat olive oil in a large pot or skillet over medium heat.
- Add chopped onion and sauté until softened, about 5-7 minutes.

- Add the rinsed and drained black-eyed peas and vegetable broth to the pot.
- Bring the mixture to a simmer, then reduce heat and cook for 10-15 minutes to allow flavors to meld.
- Stir in the fresh spinach a handful at a time until it wilts completely.

Notes
For a spicier kick, add a pinch of red pepper flakes with the garlic and onion. This dish pairs well with rice or cornbread.
