Ingredients
  

Blackened Shrimp
  • 1 lb Shrimp, large, peeled and deveined
  • 2 tbsp Blackening seasoning
  • 1 tbsp Olive oil
Lime Slaw
  • 2 cups Red cabbage, shredded
  • 1/4 cup Mayonnaise
  • 2 tbsp Lime juice
  • 2 tbsp Cilantro, fresh, chopped
  • 1/4 tsp Salt
  • 1/8 tsp Black pepper
For Serving
  • 8 Corn or flour tortillas, small
  • 1 Avocado, sliced
  • 2 Lime wedges

Method
 

Prepare the Slaw
  1. In a medium bowl, combine shredded cabbage, mayonnaise, lime juice, chopped cilantro, salt, and pepper; toss until well combined.
  2. Refrigerate the slaw until ready to serve.
Cook the Shrimp
  1. Pat the shrimp dry with paper towels, then toss them with blackening seasoning until evenly coated.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add shrimp to the hot skillet in a single layer and cook for 2-3 minutes per side, until pink and opaque.
Assemble the Tacos
  1. Warm tortillas according to package directions.
  2. Fill each warm tortilla with blackened shrimp and a generous spoonful of lime slaw.
  3. Garnish with sliced avocado and a squeeze of fresh lime juice before serving.

Notes

For an extra kick, add a pinch of cayenne pepper to the blackening seasoning, or a dash of hot sauce to the slaw.
