  • 1 loaf loaf of bread (preferably challah or brioche)
  • 4 cups fresh blueberries Can substitute with other berries
  • 6 large eggs Can substitute with egg replacer for vegan option
  • 2 cups milk Use dairy or non-dairy milk as preferred
  • 1/2 cup maple syrup More syrup can be added for sweetness
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon Sprinkle more on top for extra flavor
  • a pinch salt
  • as needed Butter For greasing the dish

Method
 

Preparation
  1. Grease a 9x13 inch baking dish with butter.
  2. Cut the bread into cubes and layer half of it in the dish.
  3. Sprinkle half of the blueberries over the bread.
  4. In a bowl, whisk together the eggs, milk, maple syrup, vanilla extract, cinnamon, and salt.
  5. Pour half of the mixture over the bread and blueberries.
  6. Layer the remaining bread cubes and blueberries on top.
  7. Pour the remaining egg mixture over the second layer.
  8. Cover the dish with plastic wrap and refrigerate overnight.
Baking
  1. Preheat the oven to 350°F (175°C).
  2. Remove the plastic wrap and bake for 45-50 minutes or until the casserole is set and golden brown.
Serving
  1. Serve the Blueberry French Toast Casserole warm, drizzled with maple syrup.
  2. Add a dusting of powdered sugar or a dollop of whipped cream if desired.
  3. Fresh fruit on the side complements the dish beautifully.

Notes

For a richer flavor, use stale bread. You can mix in nuts for added crunch and add more maple syrup for sweetness.
