Preparation
- In a saucepan, combine the water and lemon-flavored gelatin. Bring it to a boil until the gelatin is dissolved.
- Remove the saucepan from heat and let it cool slightly.
- In a mixing bowl, whip the heavy cream, sugar, and vanilla extract until soft peaks form.
- Gently fold in the lemon gelatin mixture and fresh blueberries.
- Pour the mixture into a serving dish or individual cups.
- Refrigerate for at least 2 hours to set.
Notes
Store any leftovers in the refrigerator. Cover tightly with plastic wrap or transfer to an airtight container. Best enjoyed fresh, ideally within a couple of days. For serving, add extra blueberries or a slice of lemon for decoration. You can customize with other fruits like strawberries or raspberries.
