  • 2 cups fresh blueberries Use fresh blueberries for the best flavor.
  • 1 cup lemon juice Freshly squeezed is preferred.
  • 1 cup heavy cream Whipped until soft peaks form.
  • 1/2 cup sugar Adjust to taste for sweetness.
  • 1 teaspoon vanilla extract
  • 1 package lemon-flavored gelatin
  • 1 cup water

Preparation
  1. In a saucepan, combine the water and lemon-flavored gelatin. Bring it to a boil until the gelatin is dissolved.
  2. Remove the saucepan from heat and let it cool slightly.
  3. In a mixing bowl, whip the heavy cream, sugar, and vanilla extract until soft peaks form.
  4. Gently fold in the lemon gelatin mixture and fresh blueberries.
  5. Pour the mixture into a serving dish or individual cups.
  6. Refrigerate for at least 2 hours to set.

Notes

Store any leftovers in the refrigerator. Cover tightly with plastic wrap or transfer to an airtight container. Best enjoyed fresh, ideally within a couple of days. For serving, add extra blueberries or a slice of lemon for decoration. You can customize with other fruits like strawberries or raspberries.
