  • 2 large potatoes, diced
  • 4 large eggs scrambled
  • 1 cup shredded cheese (cheddar or your choice)
  • 8 small tortillas
  • 1 tablespoon olive oil
  • to taste salt and pepper

  • salsa for serving
  • avocado for serving
  • cilantro for serving

Method
 

Cooking the Potatoes
  1. In a skillet, heat olive oil over medium heat. Add the diced potatoes and season with salt and pepper. Cook until they are golden and tender, about 10-15 minutes.
Cooking the Eggs
  1. While the potatoes are cooking, scramble the eggs in a bowl and season with salt and pepper. Cook the eggs in another skillet until fully set.
Warming the Tortillas
  1. Warm the tortillas in another pan or microwave.
Assembling Tacos
  1. Assemble the tacos by placing a portion of the seasoned potatoes, scrambled eggs, and cheese on each tortilla.
  2. Add any optional toppings you like, such as salsa, avocado, or cilantro. Serve warm.

Notes

Make sure not to overcrowd the skillet when cooking the potatoes to help them cook evenly and get crispy. You can customize the cheese to your preference and add other veggies like bell peppers or onions for extra flavor.
