  • 2 cups cooked rice Use leftover rice for convenience.
  • 2 cups broccoli florets Fresh or frozen, thawed.
  • 1 cup shredded cheddar cheese Feel free to use different types of cheese.
  • 1 can cream of mushroom soup (10.5 oz) Can use a low-fat version or homemade sauce.
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • to taste Salt and pepper
  • 1/2 cup breadcrumbs (optional) For topping, if desired.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine cooked rice, broccoli florets, cream of mushroom soup, milk, garlic powder, onion powder, and salt and pepper. Mix well.
  3. Stir in half of the shredded cheddar cheese.
Baking
  1. Pour the mixture into a greased 9x13 inch baking dish.
  2. Sprinkle the remaining cheese on top, along with breadcrumbs if using.
  3. Bake for 25-30 minutes, or until heated through and bubbly.
  4. Let it cool for a few minutes before serving.

Notes

You can serve hot from the oven, pairing well with grilled chicken, roasted meats, or a fresh salad. For storage, let the casserole cool completely before placing it in an airtight container. It will stay fresh for about 3-4 days in the refrigerator or can be frozen for longer storage.
