- In a bowl, combine the diced tomatoes, minced garlic, chopped basil, olive oil, balsamic vinegar, salt, and pepper to make the bruschetta mixture.
- Heat a skillet over medium heat.
Assembly and Grilling
- Assemble the sandwich by placing mozzarella cheese on a slice of bread, followed by a generous amount of the bruschetta mixture, and top with another slice of bread.
- Butter the outside of the sandwich, if desired.
- Grill each side of the sandwich until golden brown and the cheese is melted, about 3-4 minutes per side.
- Remove from the skillet, slice in half, and serve warm.
Notes
Serve warm and enjoy right away. Pairs well with a simple salad or soup. Add extra basil or a drizzle of balsamic vinegar for more flavor. Leftovers can be stored in the refrigerator for up to 2 days.
