Ingredients
  

Bruschetta Mixture
  • 2 cup diced tomatoes use fresh tomatoes for better flavor
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped adjust to taste
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • to taste salt and pepper adjust to your preference
Sandwich Ingredients
  • 4 slices bread (sourdough or preferred) choose a good quality bread
  • 4 ounces mozzarella cheese fresh mozzarella gives best flavor
  • optional butter for grilling

Method
 

Preparation
  1. In a bowl, combine the diced tomatoes, minced garlic, chopped basil, olive oil, balsamic vinegar, salt, and pepper to make the bruschetta mixture.
  2. Heat a skillet over medium heat.
Assembly and Grilling
  1. Assemble the sandwich by placing mozzarella cheese on a slice of bread, followed by a generous amount of the bruschetta mixture, and top with another slice of bread.
  2. Butter the outside of the sandwich, if desired.
  3. Grill each side of the sandwich until golden brown and the cheese is melted, about 3-4 minutes per side.
  4. Remove from the skillet, slice in half, and serve warm.

Notes

Serve warm and enjoy right away. Pairs well with a simple salad or soup. Add extra basil or a drizzle of balsamic vinegar for more flavor. Leftovers can be stored in the refrigerator for up to 2 days.
