Ingredients
  

For the Wonton Cups
  • 12 sheets wonton wrappers
  • cooking spray
For the Cajun Shrimp
  • 0.5 lb shrimp peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp Cajun seasoning
For the Guacamole
  • 2 avocados ripe, mashed
  • 2 tbsp red onion finely diced
  • 2 tbsp fresh cilantro chopped
  • 1 tbsp lime juice
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

Prepare Wonton Cups
  1. Preheat oven to 375°F (190°C). Lightly spray a mini muffin tin with cooking spray, then press one wonton wrapper into each cup.
  2. Bake the wonton cups for 5-7 minutes, or until they are golden brown and crispy; set aside to cool.
Cook Cajun Shrimp
  1. Heat olive oil in a skillet over medium heat, then add shrimp and Cajun seasoning.
  2. Cook for 2-3 minutes per side, until the shrimp turn pink and are cooked through; remove from heat.
Make Guacamole
  1. In a medium bowl, mash the ripe avocados.
  2. Stir in the diced red onion, fresh cilantro, lime juice, salt, and black pepper until well combined.
Assemble Cups
  1. Spoon a generous amount of guacamole into each cooled wonton cup.
  2. Top the guacamole in each cup with a few pieces of the cooked Cajun shrimp and serve immediately.

Notes

For the best texture and flavor, prepare the guacamole just before serving to prevent browning. Avoid overcooking the shrimp to keep them tender.
