Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
Filling
  • 2 packages cream cheese, softened (8 ounces each) Ensure softened to room temperature
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups diced apples Use your favorite apple varieties
  • 1 cup caramel sauce Store-bought works well
  • 1/2 teaspoon cinnamon

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9x9 inch baking pan.
  2. In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix well and press into the bottom of the prepared pan.
Filling
  1. In a large bowl, beat the cream cheese, 3/4 cup sugar, and vanilla extract until smooth.
  2. Add eggs one at a time, mixing well after each addition.
  3. Fold in the diced apples and cinnamon. Pour the cheesecake mixture over the crust in the pan.
  4. Drizzle caramel sauce over the top and swirl it gently with a knife to create a marbled effect.
Baking
  1. Bake for 30-35 minutes, or until the edges are set but the center is slightly jiggly.
  2. Allow to cool, then refrigerate for at least 4 hours before cutting into bars.
Serving
  1. Serve the bars chilled, cutting them into squares or rectangles. Drizzle with more caramel or top with whipped cream if desired.

Notes

For added flavor, use different apple varieties. Keep leftover bars in an airtight container in the refrigerator for 4-5 days.
