- Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
- Separate the egg yolks from the whites into two bowls.
- In the bowl with egg yolks, mix in the cream cheese, salt, pepper, and any herbs or spices until smooth.
- In the second bowl, add cream of tartar to the egg whites and whip until stiff peaks form.
- Gently fold the whipped egg whites into the yolk mixture using a rubber spatula. Avoid over-mixing.
- Spoon the mixture onto the prepared baking sheet in cloud-like rounds.
- Bake for 25–30 minutes or until golden and set. Let cool slightly before serving.
Notes
Beat the egg whites until stiff peaks form for a fluffy texture. Gently fold the mixtures together to keep the batter airy. Avoid over-mixing, which can deflate the clouds. Try adding shredded cheese or herbs for extra flavor variations.
