Method
 

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Separate the egg yolks from the whites into two bowls.
  3. In the bowl with egg yolks, mix in the cream cheese, salt, pepper, and any herbs or spices until smooth.
  4. In the second bowl, add cream of tartar to the egg whites and whip until stiff peaks form.
  5. Gently fold the whipped egg whites into the yolk mixture using a rubber spatula. Avoid over-mixing.
  6. Spoon the mixture onto the prepared baking sheet in cloud-like rounds.
  7. Bake for 25–30 minutes or until golden and set. Let cool slightly before serving.

Beat the egg whites until stiff peaks form for a fluffy texture. Gently fold the mixtures together to keep the batter airy. Avoid over-mixing, which can deflate the clouds. Try adding shredded cheese or herbs for extra flavor variations.
