Cheesy Garlic Zucchini Steaks

Ingredients
  

Zucchini Steaks
  • 2 large Zucchini
  • 2 tbsp Olive oil
  • 1 tsp Garlic powder
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper freshly ground
Cheese Topping
  • 1 cup Mozzarella cheese shredded
  • 0.25 cup Parmesan cheese grated
  • 2 tbsp Fresh parsley chopped, for garnish

Method
 

Preparation
  1. Preheat oven to 400°F (200°C). Slice zucchini lengthwise into 1/2-inch thick "steaks" and pat them dry.
  2. In a small bowl, whisk together olive oil, garlic powder, salt, and pepper. Arrange zucchini on a baking sheet and brush both sides with the oil mixture.
Baking & Finishing
  1. Bake for 15 minutes, then flip the zucchini steaks and bake for another 5 minutes, until tender-crisp.
  2. Remove from oven, sprinkle with mozzarella and Parmesan cheese, and broil for 2-3 minutes until cheese is melted and bubbly.
  3. Garnish with fresh parsley and serve immediately.

Notes

For extra flavor, try adding a pinch of red pepper flakes to the seasoning mix before baking.
