Cheesy Meatloaf Casserole

Ingredients
  

Meatloaf Mixture
  • 1.5 lbs Ground beef lean
  • 0.5 cup Breadcrumbs
  • 1 large Egg
  • 0.25 cup Milk
  • 0.5 medium Onion finely chopped
  • 2 cloves Garlic minced
  • 1 tbsp Worcestershire sauce
  • 2 tbsp Ketchup
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
Cheese Topping
  • 1 cup Shredded cheddar cheese
  • 0.5 cup Shredded mozzarella cheese

  • 9x13 inch baking dish

Method
 

Preparation
  1. Preheat oven to 375°F (190°C). In a large bowl, combine ground beef, breadcrumbs, egg, milk, chopped onion, minced garlic, Worcestershire sauce, 2 tablespoons of ketchup, salt, and pepper. Mix until just combined.
  2. Press the meatloaf mixture evenly into a 9x13 inch baking dish. Bake for 30 minutes to partially cook the meatloaf.
Baking and Finishing
  1. Remove the casserole from the oven. Evenly sprinkle the shredded cheddar and mozzarella cheeses over the top of the meatloaf.
  2. Return the casserole to the oven and bake for another 15-20 minutes, or until the cheese is melted and bubbly and the meatloaf is cooked through (internal temperature 160°F/71°C).
  3. Let the casserole rest for 5-10 minutes before slicing and serving. This allows the juices to redistribute for a more tender meatloaf.

Notes

For an extra crispy topping, broil for the last 2-3 minutes, keeping a close eye to prevent burning.
