Preparation
- Preheat the oven to 425°F (220°C).
- In a skillet, brown the ground beef over medium heat until cooked through. Drain excess grease.
- Stir in black beans, corn, diced tomatoes, and taco seasoning. Cook for another 5 minutes.
- In a 9×13 inch baking dish, spread the beef mixture evenly.
- Layer frozen tater tots on top of the beef mixture.
- Sprinkle shredded cheese over the tater tots.
Baking
- Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly and the tater tots are golden brown.
- Remove from oven and let cool slightly before serving.
- Top with optional toppings if desired.
Notes
Works great as a main dish alongside a fresh salad or sliced avocado. Store leftovers tightly covered in the fridge for up to 3 days.
