Cheesy Mexican Tater Tot Casserole

Ingredients
  

Main ingredients
  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 bag (32 oz) frozen tater tots
  • 1 packet taco seasoning
  • to taste salt and pepper Add according to preference.
Optional toppings
  • as needed sour cream
  • as needed green onions Chopped.
  • as needed cilantro Chopped.

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a skillet, brown the ground beef over medium heat until cooked through. Drain excess grease.
  3. Stir in black beans, corn, diced tomatoes, and taco seasoning. Cook for another 5 minutes.
  4. In a 9×13 inch baking dish, spread the beef mixture evenly.
  5. Layer frozen tater tots on top of the beef mixture.
  6. Sprinkle shredded cheese over the tater tots.
Baking
  1. Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly and the tater tots are golden brown.
  2. Remove from oven and let cool slightly before serving.
  3. Top with optional toppings if desired.

Notes

Works great as a main dish alongside a fresh salad or sliced avocado. Store leftovers tightly covered in the fridge for up to 3 days.
