Ingredients
  

For the stuffing
  • 1 cup mozzarella cheese, shredded Use fresh mozzarella for a creamier filling.
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh basil leaves, chopped
  • 2 cloves garlic, minced
  • salt and pepper to taste
  • 1 teaspoon Italian seasoning (optional)
For the chicken
  • 4 boneless, skinless chicken breasts
  • Olive oil For searing the chicken.

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix together the mozzarella cheese, cherry tomatoes, basil, garlic, salt, pepper, and Italian seasoning.
  3. Cut a pocket into each chicken breast and stuff it with the cheese mixture.
Cooking
  1. Heat olive oil in a skillet over medium heat and sear the stuffed chicken breasts on both sides until golden brown.
  2. Transfer the chicken to an oven-safe dish and bake for about 20-25 minutes or until the chicken is cooked through.
  3. Let it rest for a few minutes before serving.

Notes

Make sure to not overstuff the chicken to prevent it from bursting during cooking. If you want extra flavor, marinate the chicken breasts in olive oil, lemon juice, salt, and pepper for 30 minutes before stuffing. You can experiment with the filling by adding spinach, artichokes, or different kinds of cheese like cheddar or feta for a unique twist.
