Preparation
- Preheat the oven to 350°F (175°C). Line a cupcake pan with cupcake liners.
- In a bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of each cupcake liner to form the crust.
- In a separate bowl, beat the cream cheese until smooth. Add the powdered sugar, vanilla extract, and sour cream, mixing until combined.
- Add the eggs one at a time, mixing well after each addition.
- Spoon the cheesecake mixture over the crusts in the cupcake liners, filling them about 2/3 full.
- Add a spoonful of cherry pie filling on top of each cupcake.
Baking
- Bake in the preheated oven for about 20-25 minutes, or until the centers are set.
- Allow the bites to cool completely before serving.
Notes
Cherry Cheesecake Cupcake Bites are best served chilled or at room temperature. Consider adding a dollop of whipped cream on top for an extra treat. To store, place in an airtight container in the refrigerator for 3-5 days or freeze individually for longer storage.
