Ingredients
  

Crust Ingredients
  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
Cheesecake Filling Ingredients
  • 2 cups cream cheese, softened Use room temperature for smoother filling.
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 2 large eggs Add one at a time.
Topping Ingredients
  • 1 cup cherry pie filling Can substitute with fresh cherries if desired.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Line a cupcake pan with cupcake liners.
  2. In a bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of each cupcake liner to form the crust.
  3. In a separate bowl, beat the cream cheese until smooth. Add the powdered sugar, vanilla extract, and sour cream, mixing until combined.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Spoon the cheesecake mixture over the crusts in the cupcake liners, filling them about 2/3 full.
  6. Add a spoonful of cherry pie filling on top of each cupcake.
Baking
  1. Bake in the preheated oven for about 20-25 minutes, or until the centers are set.
  2. Allow the bites to cool completely before serving.

Notes

Cherry Cheesecake Cupcake Bites are best served chilled or at room temperature. Consider adding a dollop of whipped cream on top for an extra treat. To store, place in an airtight container in the refrigerator for 3-5 days or freeze individually for longer storage.
