Ingredients
  

For the pies
  • 1 package refrigerated pie crusts
  • 1 cup cream cheese, softened Make sure it is softened for a smooth filling.
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup cherry pie filling Adjust amount to preference for a fruitier flavor.
  • 1 egg for egg wash Optional, for a golden finish.
  • Oil For frying.
  • Optional: powdered sugar For dusting before serving.

Method
 

Preparation
  1. Roll out the pie crusts and cut them into circles.
  2. In a bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  3. Place a spoonful of the cream cheese mixture and a spoonful of cherry pie filling on one half of each pie crust circle.
  4. Fold the crust over and seal the edges with a fork.
Cooking
  1. Preheat oil in a deep pan over medium heat.
  2. Carefully fry the hand pies until golden brown on both sides.
  3. Remove from oil and drain on paper towels.
  4. Optional: dust with powdered sugar before serving.

Notes

Best served warm. Pairs nicely with whipped cream or vanilla ice cream. Store in an airtight container at room temperature for up to two days, or in the refrigerator.
