Ingredients
  

For the cookie dough
  • 1 cup unsalted butter, softened Make sure your butter is softened to room temperature.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup dried cranberries Can substitute fresh cranberries, but may need to adjust sugar.
  • 1 tablespoon orange zest Use fresh orange zest for best flavor.
  • 1/2 cup chopped pecans Optional; skip for a nut-free version.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add to the creamed mixture, mixing until just combined.
  5. Fold in the cranberries, orange zest, and pecans if using.
Baking
  1. Drop rounded tablespoons of dough onto the prepared baking sheet.
  2. Bake for 10-12 minutes, or until edges are golden.
  3. Allow to cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.

Notes

These cookies can be served warm or at room temperature. For a special touch, sprinkle powdered sugar on top before serving. Store in an airtight container at room temperature for about a week or freeze for up to three months.
