Ingredients
  

Dry Ingredients
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon Extra can be sprinkled on top before baking for added flavor.
Wet Ingredients
  • 1 cup unsalted butter, softened Ensure butter is softened for best texture.
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup maple syrup Can be substituted with honey or agave syrup, but will alter flavor.
  • 1 large egg
  • 1 teaspoon vanilla extract
For Decorating
  • White chocolate Melted, for decorating the cookies.

Method
 

Preparation and Baking
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, salt, and cinnamon.
  3. In another bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Mix in the maple syrup, egg, and vanilla until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop tablespoon-sized portions of dough onto a lined baking sheet.
  7. Bake for 10-12 minutes or until the edges are golden.
  8. Allow to cool slightly and then decorate with melted white chocolate before serving.

Notes

Store cookies in an airtight container at room temperature for up to a week, or freeze for longer storage. Allow dough to chill in the fridge for up to 2 days before baking.
