Prepare Dough
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together peanut butter, granulated sugar, brown sugar, and softened butter until light and fluffy using an electric mixer.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Bake Cookies
- Scoop dough into 1-inch balls and place them about 2 inches apart on the prepared baking sheets.
- Flatten each cookie ball with a fork, creating a crosshatch pattern.
- Bake for 9-12 minutes, or until the edges are lightly golden and the centers are set but still soft.
- Remove from oven and let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
Notes
For extra chewiness, underbake slightly. Store in an airtight container at room temperature for up to 5 days.
