Ingredients
  

Cookie Dough
  • 1 cup Creamy peanut butter
  • 1/2 cup Granulated sugar
  • 1/2 cup Packed light brown sugar
  • 1/2 cup Unsalted butter softened (1 stick)
  • 1 Large egg
  • 1 teaspoon Vanilla extract
  • 1 1/4 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt

Method
 

Prepare Dough
  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together peanut butter, granulated sugar, brown sugar, and softened butter until light and fluffy using an electric mixer.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Bake Cookies
  1. Scoop dough into 1-inch balls and place them about 2 inches apart on the prepared baking sheets.
  2. Flatten each cookie ball with a fork, creating a crosshatch pattern.
  3. Bake for 9-12 minutes, or until the edges are lightly golden and the centers are set but still soft.
  4. Remove from oven and let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra chewiness, underbake slightly. Store in an airtight container at room temperature for up to 5 days.
