Preparation
- Sauté sliced bell peppers and onion in olive oil in a large skillet until they are tender-crisp.
Assembly & Baking
- In a large bowl, combine the cooked shredded chicken, sautéed vegetables, fajita seasoning, softened cream cheese, and chicken broth.
- Transfer the mixture evenly into a greased 9x13 inch baking dish.
- Evenly sprinkle the shredded cheese over the chicken mixture.
- Bake the casserole at 375°F (190°C) for 20-25 minutes, or until it is bubbly and the cheese is melted and golden.
Serving
- If desired, garnish the casserole with crushed tortilla chips before serving hot.
Notes
For an extra kick, add a pinch of cayenne pepper to the seasoning mix, or top with sliced jalapeños before baking.
