  • 2 tbsp fajita seasoning
  • 8 oz cream cheese, softened
  • 1/2 cup chicken broth
  • 1 cup Monterey Jack or Mexican blend cheese, shredded

  • 1 cup tortilla chips, crushed optional

Method
 

Preparation
  1. Sauté sliced bell peppers and onion in olive oil in a large skillet until they are tender-crisp.
Assembly & Baking
  1. In a large bowl, combine the cooked shredded chicken, sautéed vegetables, fajita seasoning, softened cream cheese, and chicken broth.
  2. Transfer the mixture evenly into a greased 9x13 inch baking dish.
  3. Evenly sprinkle the shredded cheese over the chicken mixture.
  4. Bake the casserole at 375°F (190°C) for 20-25 minutes, or until it is bubbly and the cheese is melted and golden.
Serving
  1. If desired, garnish the casserole with crushed tortilla chips before serving hot.

Notes

For an extra kick, add a pinch of cayenne pepper to the seasoning mix, or top with sliced jalapeños before baking.
