Ingredients
  

For the Tzatziki Sauce
  • 1 cup Greek yogurt Use full-fat for creaminess
  • 1 cucumber grated cucumber Squeeze out excess water
  • 2 cloves minced garlic
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice Freshly squeezed preferred
  • to taste Salt and pepper
  • Fresh dill (optional) For garnish
For the Bowls
  • 2 cups cooked rice Brown or white rice can be used
  • 2 cups cooked chicken, diced Use leftover chicken for convenience
  • 1 Tomato Diced, for serving
  • 1 Lettuce Chopped, for serving

Method
 

Prepare the Tzatziki Sauce
  1. In a bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, salt, and pepper to make the tzatziki sauce.
Assemble the Bowls
  1. In a serving bowl, layer the cooked rice, diced chicken, and tzatziki sauce.
  2. Top with diced tomatoes and lettuce.
  3. Garnish with fresh dill if desired.
  4. Serve immediately.

Notes

Chicken Tzatziki Bowls are best served fresh and warm. Allow everyone to customize their bowls with additional toppings for a fun meal experience. Store leftovers separately in airtight containers for up to three days.
