  • 2 lbs Chicken breast diced
  • 1 cup Uncooked rice
  • 2 cups Chicken broth
  • 1 cup Tzatziki sauce
  • 1 tbsp Olive oil
  • 1/2 medium Onion chopped
  • 2 cloves Garlic minced
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1 tsp Dried oregano
  • 2 tbsp Fresh dill chopped, for garnish

Method
 

Preparation
  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a large skillet, heat olive oil over medium heat, then cook diced chicken until lightly browned.
  3. Add chopped onion and minced garlic to the skillet, cooking until softened, about 3-5 minutes.
Baking
  1. Transfer the chicken mixture to the prepared baking dish and stir in the uncooked rice, chicken broth, salt, pepper, and oregano.
  2. Cover the dish tightly with foil and bake for 30-35 minutes, or until the rice is tender and all liquid is absorbed.
Serving
  1. Remove from oven, let rest for 5 minutes, then dollop with tzatziki sauce and garnish with fresh dill before serving.

Notes

For a richer flavor, use chicken thighs instead of breasts. You can also add chopped bell peppers or spinach to the bake for extra vegetables.
