Preparation
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- In a large skillet, heat olive oil over medium heat, then cook diced chicken until lightly browned.
- Add chopped onion and minced garlic to the skillet, cooking until softened, about 3-5 minutes.
Baking
- Transfer the chicken mixture to the prepared baking dish and stir in the uncooked rice, chicken broth, salt, pepper, and oregano.
- Cover the dish tightly with foil and bake for 30-35 minutes, or until the rice is tender and all liquid is absorbed.
Serving
- Remove from oven, let rest for 5 minutes, then dollop with tzatziki sauce and garnish with fresh dill before serving.
Notes
For a richer flavor, use chicken thighs instead of breasts. You can also add chopped bell peppers or spinach to the bake for extra vegetables.
