- Brown ground beef with onion in a large skillet, then drain any excess fat.
- Stir in minced garlic, chili powder, cumin, salt, and pepper; cook for 1 minute until fragrant.
- Add diced tomatoes, kidney beans, tomato sauce, and beef broth; bring to a simmer.
- Reduce heat, cover, and let the chili simmer for 10-15 minutes to allow flavors to meld.
- Preheat oven to 375°F (190°C) and spread the chili mixture evenly into a 9x13 inch baking dish.
- Arrange frozen tater tots in a single layer over the chili, then sprinkle generously with both cheddar and Monterey Jack cheeses.
- Bake for 30-35 minutes, or until the tater tots are golden brown and crispy and the cheese is bubbly.
- Let the casserole stand for a few minutes before serving.
Notes
For an extra kick, add a pinch of red pepper flakes to the chili mixture.
