For the Chili Base
  • 1 lb Ground beef
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 2 tbsp Chili powder
  • 1 tbsp Cumin
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 can (14.5 oz) Diced tomatoes undrained
  • 1 can (15 oz) Kidney beans drained and rinsed
  • 1 can (8 oz) Tomato sauce
  • 0.5 cup Beef broth
For the Topping
  • 32 oz bag Frozen tater tots
  • 2 cups Shredded cheddar cheese
  • 1 cup Shredded Monterey Jack cheese optional

Method
 

Instructions
  1. Brown ground beef with onion in a large skillet, then drain any excess fat.
  2. Stir in minced garlic, chili powder, cumin, salt, and pepper; cook for 1 minute until fragrant.
  3. Add diced tomatoes, kidney beans, tomato sauce, and beef broth; bring to a simmer.
  4. Reduce heat, cover, and let the chili simmer for 10-15 minutes to allow flavors to meld.
  5. Preheat oven to 375°F (190°C) and spread the chili mixture evenly into a 9x13 inch baking dish.
  6. Arrange frozen tater tots in a single layer over the chili, then sprinkle generously with both cheddar and Monterey Jack cheeses.
  7. Bake for 30-35 minutes, or until the tater tots are golden brown and crispy and the cheese is bubbly.
  8. Let the casserole stand for a few minutes before serving.

Notes

For an extra kick, add a pinch of red pepper flakes to the chili mixture.
