Chinese-Inspired Chicken Noodle Soup

  • 2 each Chicken breast, boneless, skinless
  • 200 g Egg noodles
  • 4 cups Chicken broth
  • 2 cups Water
  • 3 tbsp Soy sauce
  • 1 tsp Sesame oil
  • 1 tbsp Fresh ginger, grated
  • 2 cloves Garlic, minced
  • 2 medium Carrots, thinly sliced
  • 2 each Celery stalks, thinly sliced
  • 3 each Scallions, chopped
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Method
 

Preparation
  1. Dice chicken breast into bite-sized pieces and set aside.
  2. Prepare all vegetables: thinly slice carrots and celery, grate ginger, mince garlic, and chop scallions, separating white and green parts.
Cooking the Soup
  1. Heat a large pot over medium heat, add a drizzle of oil, then cook the diced chicken until lightly browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  2. In the same pot, add ginger, garlic, and the white parts of the scallions; sauté for 1-2 minutes until fragrant.
  3. Add sliced carrots and celery to the pot, cooking for 3-5 minutes until slightly softened.
  4. Pour in chicken broth and water, bring to a boil, then add the egg noodles and cooked chicken.
  5. Reduce heat and simmer for 5-7 minutes, or until noodles are tender, stirring occasionally.
  6. Stir in soy sauce, sesame oil, salt, and pepper; taste and adjust seasonings as needed.
Serving
  1. Ladle the hot soup into bowls and garnish with the green parts of the chopped scallions before serving immediately.

Notes

Feel free to add other vegetables like bok choy or mushrooms, or a pinch of red pepper flakes for a touch of heat. Adjust soy sauce and salt to your taste.
