Ingredients

  • 1/2 cup chia seeds
  • 2 cups almond milk (or any non-dairy milk) Can substitute with coconut milk for richer texture.
  • 1/4 cup cocoa powder May substitute with carob powder for a different taste.
  • 1/4 cup maple syrup (or sweetener of choice) Add more for a sweeter pudding.
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Method
 

Preparation
  1. In a bowl, whisk together the almond milk, cocoa powder, maple syrup, vanilla extract, and salt until smooth.
  2. Add the chia seeds and stir well to combine.
  3. Let it sit for 5 minutes, then stir again to prevent clumping.
Refrigeration
  1. Cover and refrigerate for at least 2 hours or overnight until pudding-like consistency is achieved.
Serving
  1. Serve chilled, optionally topped with fruits, nuts, or whipped coconut cream.

Notes

Store in a covered container in the refrigerator for about 4 to 5 days. Stir before serving if it thickens.
