For the Cake
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
For the Mousse and Topping
  • 1 cup heavy cream
  • 8 oz semisweet chocolate, chopped
  • 1/2 cup chocolate ganache (for topping)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a round cake pan.
  2. In a bowl, mix the flour, cocoa powder, baking powder, and salt together.
  3. In a separate bowl, cream the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, then stir in the vanilla.
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  6. Pour the batter into the prepared pan and bake for about 25-30 minutes, or until a toothpick comes out clean.
  7. Allow to cool completely.
Mousse Preparation
  1. Melt the chocolate and let it cool slightly.
  2. Whip the cream until soft peaks form, then fold the melted chocolate into the whipped cream until smooth.
  3. Spread the mousse over the cooled cake.
  4. Top with chocolate ganache before serving.

Notes

Make sure your ingredients are at room temperature for easier mixing. Don’t overmix the batter to keep the cake light and fluffy. Allow the cake to cool completely before adding the mousse layer to prevent melting. Use high-quality chocolate for the best flavor in the mousse.
